Cooking for David Attenborough & Fat Boy Slim in Liverpool. To cooking on South Korean Netflix in front of 7.7 million viewers. Always showcasing Irish foods. We have the best suppliers and foods in the world.

With the help of social media during lockdown, I found a great way to connect through food. I have been an ambassador for Irish lamb with Bord Bia. Helped local businesses set up their online recipes and menus. And led the way for healthy eating in Irish schools. I found an old book on mixology from New York and have been fascinated with the skills and methodology in cocktails. Particularly in syrups and extracting flavours.

My main focus for the future is to understand food wastage and how we can utilise it, without sacrificing flavour.
